Today we’re back with another Healthy Table feature. The dish we’re introducing today is Park Na-rae’s Eggplant Rice Bowl! Recently, Park Na-rae enjoyed this eggplant rice bowl on I Live Alone, and it’s been trending ever since.
Since Chubby Mom and her daughter are huge fans of eggplant, we decided to try making it ourselves, taste it, and give it a full review. The verdict? Ingredients for Eggplant Rice Bowl (What You’ll Need)

Eggplants are so cheap yet so healthy! At the market, we got 4 for just 2,000 won… Everyone, hurry to the market and grab some.
For one serving of Park Na-rae’s Eggplant Rice Bowl, here are the ingredients (and what Chubby Mom’s family chose)

The ingredients labeled “Park Na-rae’s” are the ones she used, while the ones marked with a circle are what Chubby Mom’s family actually used. Essentials are highlighted in mint color. Even if you don’t have the other ingredients, just the essentials are enough to make it delicious—so keep that in mind!
Sauce Recipe
The sauce ingredients Chubby Mom and daughter used were simply soy sauce, tuna extract, minced garlic, and water, as shown in the table above. Park Na-rae added allulose and doubanjiang, but we adjusted the recipe to our taste and kept it simpler.
If you’d like to add a touch of sweetness and more flavor, feel free to include allulose and doubanjiang as noted in Park Na-rae’s version.
Making the sauce for the eggplant rice bowl is super easy, it needs 1 tablespoon soy sauce, 1 tablespoon tuna extract, 3 tablespoons water, 1 teaspoon minced garlic. Just mix them all together, and you’re done! It’s so simple… there’s really nothing more to explain (feeling a bit shy).

Eggplant Rice Bowl Recipe
1. Microwave the cleaned eggplant for 3 minutes
Wash the eggplant thoroughly and remove the stem. Place the whole eggplant on a plate, cover it with plastic wrap, and microwave it for 3 minutes.

2. Cut the Eggplant in Half and Score It
After microwaving for 3 minutes, take the eggplant out and cut it in half. Gently score the inside with a fork or knife so the seasoning can soak in better. Be careful—it will be hot!

3. Pan-fry the Eggplant with Oil Until Golden
Next, heat some oil in a frying pan and place the eggplant inside. Chubby mom and her daughter used avocado oil, but since Park Na-rae used regular cooking oil, you can just use whatever oil you normally cook with at home.

Keep the heat at medium and grill the eggplant. Park Na-rae sprinkled starch on the eggplant at this stage, but Chubby mom and her daughter skipped it according to their preference. Grill the eggplant evenly in the oil, turning it so that it becomes golden brown all around, as shown in the photo below. Be careful not to burn it!

4. Pour the prepared sauce evenly over the eggplant and cook
Pour the simple sauce you made earlier over the eggplant and gently simmer, turning it so the flavors soak in evenly. Park Na-rae brushed a little doubanjiang on the eggplant at the end of cooking in the pan, but Chubby mom and her daughter didn’t use any doubanjiang, both because they didn’t have it at home and to suit their taste preferences.

5. Place the eggplant on top of the rice and add green onions, sesame seeds, and perilla oil
Once the sauce has finished cooking, place the eggplant over the rice. Since Chubby mom’s family eats whole-grain rice, they placed the cooked eggplant on top of whole-grain rice as shown in the photo below.

Then, generously sprinkle chopped green onions on top. Chubby mom’s family used regular green onions, but if you have scallions, you can use those instead.

Then, drizzle some perilla oil on top. This was added according to Chubby mom’s family’s preference, so others can skip it if they like. The perilla oil Chubby mom and her daughter use is N-Oil raw perilla oil. If you’re curious about it, check the link below.

Finally, sprinkle some sesame seeds as a little cheat to make it look extra appetizing. Since Chubby mom and her daughter had run out of regular sesame seeds at home, they used black sesame seeds. Others can simply use the sesame seeds they have on hand.

Honestly, even just like this, it’s already super delicious and complete, but to add some protein, we made scrambled eggs just like Park Na-rae did and added them to the eggplant rice bowl. Park Na-rae placed the scrambled eggs on the rice first and then the eggplant on top, but Chubby mom and her daughter forgot to add the eggs in the middle, so they just placed them on the side.
While just adding scrambled eggs would have been enough, they felt like adding a little extra, so they chopped some walnuts and cucumber for decoration. (It might have been a bit much… lol) The walnuts and cucumber are purely for garnish, so just take that as a reference!

Since the title is “Eggplant Rice Bowl,” it felt like the eggplant was hidden under all the toppings, so we took a close-up shot of the eggplant. (The eggplant is really there—this is truly an eggplant rice bowl…)

But honestly, it’s really simple, with hardly anything added, and yet it’s super delicious. Chubby mom also said it was tasty and praised it! (Feeling proud!) Definitely try making it—it’s really, really good.

Benefits of Eggplant
Wait a moment! Before you just eat this delicious eggplant rice bowl, let’s take a moment to talk about how healthy and beneficial eggplant really is. By now, it’s probably well-known, but eggplants are rich in anthocyanins and chlorogenic acid.
Anthocyanins and chlorogenic acid help protect cardiovascular health by regulating blood pressure and preventing arteriosclerosis, eliminate free radicals to slow down cellular aging and improve skin health, and even protect brain cells, helping to maintain memory.
