Ta-da! Today, I’m going to review a healthy vegetable dish that you can enjoy anytime as a light meal or snack — Carrot Rapee.

 

Carrots are not only beautiful in color and naturally sweet (especially when lightly stir-fried), but they’re also one of the most iconic healthy vegetables. As I mentioned in my previous post, they’re a veggie that Chubby mom and her daughter truly love.

 

While wondering, “What should I cook with carrots today?”, Chubby mom’s daughter came across a dish called Carrot Rapee by chance. After trying it out, she immediately thought — “This is it!” It was so delicious and simple to make that she decided it was absolutely worth writing a post about!

In this post, I’ll be sharing everything about Carrot Rapee — what it is, how to make it, how to store it, how long it lasts, the best ways to enjoy it, the nutrients in carrots and their amazing health benefits, and even carrot-related supplements. So let’s dive right in!

First of all, let’s start by introducing carrot râpé for those who, like Chubby mom and her daughter, might not be familiar with it.

 

What is Carrot Rapee?

  Carrot râpé is a French-style vegetable salad, typically made by finely shredding raw carrots and tossing them with olive oil, lemon juice, and a pinch of salt. Thanks to the olive oil, it has a rich flavor, while the combination of carrots and lemon juice gives it a fresh and naturally sweet taste.

 

  One of its greatest advantages is that, because it’s made with raw vegetables, almost all of the carrots’ nutrients are preserved. It’s also quick to prepare and pairs wonderfully with a variety of dishes.

 

 

 

Next, let’s take a look at the benefits of carrots, the main ingredient in carrot râpé. (Knowing what they’re good for makes them taste even better!)

 

Nutrients and Health Benefits of Carrots

  As everyone probably knows, carrots aren’t just a great salad ingredient—they’re also a highly beneficial vegetable for your health. Carrots are rich in beta-carotene, a compound that the body converts into vitamin A.

 

  In addition, carrots are known to be abundant in vitamins A and C, antioxidants, potassium, and dietary fiber. To make it easier to understand the benefits of each nutrient, I’ve summarized them in the table below for reference.

  Since beta-carotene and vitamin A are emphasized so much among the nutrients in carrots, Chubby mom’s daughter suddenly wondered: how many carrots do you need to eat in a day to meet the recommended daily intake of vitamin A? She checked right away! It turns out that eating about 1 to 1.5 carrots a day is enough to meet the daily recommended amount of vitamin A.

 

  At first, you might think, “Just one carrot a day? That’s nothing!” But when you see the amount of carrot used to make the carrot râpé below… you might realize, “Ah… I was underestimating it.” Of course, if you eat a little carrot at every meal and combine it with other vegetables or foods rich in vitamin A, it’s possible to meet the recommended daily intake.

 

  However, for those who find it difficult to consistently include carrots or vitamin A–rich foods in every meal, it can be challenging. In that case, if you want to conveniently get your daily vitamin A all at once, it’s perfectly fine to take a vitamin A supplement without overdoing it.

 

 

 

Now that we’ve learned what carrot râpé is and the health benefits of carrots, it’s finally, finally time to make the carrot râpé we’ve been waiting for! Let’s start by introducing the ingredients.

 

Ingredients for Carrot Rapee

  I heard that Yoon Eun-hye made carrot râpé, which made it even more popular. When she made it, she used all the ingredients below except for red cabbage, salt, and pepper.

 

  However, Chubby mom and her daughter tried it a little differently—they left out allulose and whole-grain mustard, and instead added red cabbage, salt, and pepper to make their version.

Carrot * 1
Red cabbage 1 large handful
Olive oil * 3 tablespoons
Lemon juice * 3 tablespoons
Salt a pinch
Black pepper 2 pinches
Allulose 2 tablespoons
Whole-grain mustard 2 tablespoons

 

 

  In the table above, the ingredients marked with a green asterisk (*) are considered essential by Chubby mom and her daughter.

 

  If you want to follow Yoon Eun-hye’s method and add a bit more sweetness, feel free to include allulose and whole-grain mustard when making it.

 

  Beyond the ingredients listed, you can also add nuts, raisins, parsley, or other ingredients to suit your personal taste. Adjust the amounts and additions according to your preference when preparing the carrot râpé.

 

 

 

 

 

 

 

Now, let’s make the carrot râpé using the ingredients we introduced above.

 

Carrot Rapee Recipe

  1. Wash and peel the carrot.

    Chubby mom’s daughter peeled the carrot just in case it wasn’t completely clean. However, if your carrot is really thoroughly washed, we recommend using it with the peel. That’s because the peel contains more beta-carotene and dietary fiber! (Don’t miss out on these nutrients!)

  2. Shred the carrot (and add the red cabbage).

    If you have a mandoline slicer at home, you can simply use it to shred the carrot. Unfortunately, Chubby mom’s house only had a flat slicer… so after carefully using the flat slicer, we had to go back and finely chop it with a knife. (The inner caveman cries…)

    Here, Chubby mom’s family decided to add some red cabbage as well. While the carrots alone already give a bright, beautiful orange color, Chubby mom’s daughter felt like trying a bit of red cabbage too. So, she shredded about a handful of red cabbage and added it to a large bowl, making it easy to mix all the ingredients together.

  3. Toss the shredded carrots with olive oil, salt, pepper, and lemon juice.

    As described in the ingredient list, we added 3 tablespoons of olive oil, a pinch of salt, 2 pinches of pepper, and 3 tablespoons of lemon juice, then put on gloves and mixed everything thoroughly. Chubby mom’s daughter used fresh lemon juice this time. Of course, when feeling lazy or pressed for time, she sometimes uses organic bottled lemon juice for convenience.

    Next, here’s a look at adding the pepper and salt! As mentioned earlier, Yoon Eun-hye’s recipe doesn’t include pepper or salt. If you want to follow her method, skip the pepper and salt and add allulose and whole-grain mustard instead!

    Next, it’s time to mix everything enthusiastically with gloved hands. Originally, we tried using a spoon or chopsticks without gloves, but it just didn’t work… (Give up!) Your hands really are the best tool for the job.

    Ta-da! The carrot râpé is finally complete. Making carrot râpé is incredibly simple! Just shred the carrots, add olive oil and the other ingredients, mix everything together, and it’s ready. It’s a perfect, easy-to-make salad that anyone can enjoy at home.

 

    The freshness of the lemon and the natural sweetness of the carrots make it delicious, while the rich flavor of the olive oil gives it a satisfying depth. The pinch of pepper adds just the right touch. Chubby mom’s daughter even added red cabbage along with the carrots, making it extra crunchy and incredibly tasty!

How to Eat Carrot Rapee & Storage Guide

  1. How to Eat Carrot Râpé

    There are three main ways to enjoy carrot râpé. The first is to eat it as is, just plain. The second is to use it in sandwiches or salads; in this case, adding nuts or dried fruits like raisins can enhance the flavor even more. The third way is to serve it alongside main dishes such as grilled meat, fish, or pasta.

 

  2. Storage Duration for Carrot Râpé

    Carrot râpé is typically stored in the refrigerator. When kept in a sealed container, it can last about 2–3 days. After three days, moisture from the carrots may reduce the crisp texture and affect the taste, so it’s recommended to consume it within 2–3 days.

 

    Carrot râpé is a delicious salad or side dish on its own, but for a bit more fun, Chubby mom’s daughter chose the second method—using it in a sandwich—and made a carrot râpé sandwich. (Yay!)

 

How to Make a Carrot Rape Sandwich

  The essential ingredients for making a carrot râpé sandwich are the bread and the carrot râpé, marked with green asterisks above. As I’ll explain again below, even if you just put the carrot râpé on the bread, it’s incredibly delicious… it’s amazing!

 

 

  2. Carrot Râpé Sandwich Recipe

    - First, take a ripe avocado, wash it thoroughly, remove the pit, and slice it thinly.

    - Next, lightly toast the bread and add a slice of cheese. Since there’s already creamy avocado, Chubby mom’s daughter used just one slice of cheese, but cheese lovers can definitely add two slices—it’s a fantastic idea! For reference, the bread she used was Paris Baguette’s Blue Label Whole Wheat Bread.

    - Next, place the sliced avocado on the bread, sprinkle a little black pepper on top, and then pile on a generous amount of carrot râpé. I mean really generous…

    - Finally, place the top slice of bread to complete the sandwich! You can eat it just like this, but we were too curious about the cross-section and wanted to capture a prettier photo, so we sliced it with a knife. From the third photo below, you can see the beautiful cross-section of the sandwich—the neatly arranged avocado and vibrant carrot râpé look amazing!

  And then, the rumor goes that it was devoured quickly and deliciously… On top of that, it wasn’t enough, so another sandwich was made using just carrot râpé.

 

  The amazing thing is that even just placing carrot râpé on the bread, without adding anything else, was incredibly tasty! If you don’t have any other ingredients at home, don’t worry—just try it with carrot râpé alone. You’ll be satisfied.

  As mentioned earlier, Chubby mom’s daughter used an entire carrot for the sandwich, but even after finishing it, there was still plenty of carrot râpé left. She stored the leftovers in a sealed container in the refrigerator.

 

  As explained above, if you have any carrot râpé left, be sure to refrigerate it and eat it within 2–3 days! Some people even say that letting carrot râpé sit in the fridge for a bit can make it taste even better, so she’s planning to try it again tomorrow. She’s really looking forward to it!
