Ta-da! It’s been a while, but Chubby mom’s correspondent is back with the Three Meals a Day corner! Today, I’m going to share how Chubby mom’s family made clam soup using the clams we caught during our recent trip to Muchangpo in Boryeong, South Chungcheong. It’s unbelievably easy and simple — the ultimate quick clam soup! Let me introduce the recipe right now!

Ingredients for Clam Soup
The ingredients for clam soup are seriously, seriously simple. Honestly, you can make it with just clams and salt! But to add a little extra kick, Chubby mom’s daughter added garlic, green onions, and Cheongyang chili peppers — and even threw in some king oyster mushrooms. The essential ingredients are clams and salt, so if you don’t have anything else at home, you can still make it just fine! (If the clams are fresh, it’s delicious no matter what...)

Below are the ingredients for two servings, so use the amounts as a reference when you cook!

| Clams | Enough for 2 servings (about two handfuls) |
| Salt | 1 teaspoon |
| Garlic | 4–5 cloves |
| Cheongyang chili pepper | Half a pepper |
| Green onion | About 5 cm (2 inches) |
| King oyster mushrooms | 2 pieces |
Clam Soup Recipe
1. First, prepare the cleaned clams.
Wash them thoroughly and make sure they have been properly purged of sand. What makes this extra satisfying is that these clams were the ones Chubby mom and her daughter caught themselves during a mudflat experience on our trip to Muchangpo this past August.
It was so much fun, and after catching them, we worked hard to purge the sand, scrub them clean, and freeze them right away. Just two days later, we took them out and cooked with them — and the taste was absolutely amazing. Be sure to use fresh clams whenever possible!

2. Finely chop the garlic, Cheongyang chili pepper, king oyster mushrooms, and green onion.
These additional ingredients aren’t strictly necessary, but Chubby mom’s family likes adding green onions, garlic, and Cheongyang chili peppers, so we included them.
The amounts used are based on the two-serving measurements listed above. Just a note: if you use a whole Cheongyang chili pepper, it can get very spicy and make your throat feel sharp, so be careful!

And honestly, the king oyster mushrooms aren’t necessary either, but I thought they would make it taste even better, so I added them on the day I wrote this review — and I really think it was a great choice. Delicious!!!
3. Add water, clams, and salt to a pot and bring to a boil.
Use enough water to just cover the clams, but it’s not an exact rule. If you want more broth, feel free to add extra. Add all the clams and about 1 teaspoon of salt, as shown in the photo below. Then, bring it to a boil over high heat.

4. Lower the heat slightly and remove the foam.
As the clams boil, you’ll see a lot of white foam forming, just like in the photo below. It doesn’t look very appetizing, so use a ladle to skim it off. (Busy, busy…)

Once the water is boiling, all the foam has been removed, and the clams have fully opened their shells like in the photo below, it’s time to add the additional ingredients!

5. Add the king oyster mushrooms, garlic, Cheongyang chili pepper, and green onions, and simmer briefly.
As everyone knows, vegetables cook very quickly… so just simmer them lightly, and turn off the heat as soon as it starts boiling again. I was a bit unsure at first whether the king oyster mushrooms would go well, but I think adding them was a great choice.

Thanks to the king oyster mushrooms, the soup looks more generous, and the texture when eating is soft and pleasant. If you’re wondering what to add to make your clam soup a bit more flavorful, I highly recommend the king oyster mushrooms!
Below is the finished result!! With just a little salt, this is a truly healthy, light, and ultra-simple clam soup — complete!!

Boiled Horn Snails
Below are the horn snails and small crabs we caught along with the clams! We wanted to enjoy them together with the clam soup, so we boiled them in water. You can add a little Cheongyang chili pepper or doenjang (fermented soybean paste) while boiling for extra flavor, depending on your taste. This time, however, we just boiled them in plain water without adding anything.

During the mudflat experience, Chubby mom’s daughter worked really hard collecting the horn snails stuck to the rocks… Sorry, little snails… but it was so much fun and they taste amazing! If you gently pierce them with a needle and twist, the meat comes out easily.
Now that we’ve eaten them all, looking at the photos makes me miss them and crave them again. The extracted meat was saved and later added to doenjang-jjigae (soybean paste stew)… absolutely amazing!!!
